These baked fishcakes are made with locally-sourced fresh fish, coated in panko breadcrumbs to create a crisp, golden exterior and a soft melt-in-the-mouth centre. These fish cakes are made with a mixture of salmon, haddock and pollock combined with mashed potato and shards of spring onion. These fish cakes are served on a bed of crisp and crunchy asparagus, mangetout and peas, all served with a side of homemade sweet chilli sauce!
The seafood in this dish means it’s a great source of heart-healthy Omega-3 fatty acids as well as a host of vitamins and minerals like vitamin D and B12 as well as potassium and selenium. We have baked our fish cakes, rather than frying them, meaning that they have a crunchy yet light exterior, and are lower in fat than your regular store-bought fish cakes.
