This Superfood Falafel Salad is the perfect lunch option for those looking for something wholesome and nutritious meal on the go.

While traditionally the falafels are deep- fried, we have put a healthy twist on it by baking the falafel and serving it on a bed of mixed salad leaves with a combination of delicious vegetables like broccoli, asparagus, beetroot, carrots, celery and red onion with added pomegranate for sweetness.
